Friday was the last day my son and I spent with my parents in Colorado. I am so sad to go; I'm always, always envious of parents of young children who live near their extended family. It makes my son so happy to be around his grandparents, aunts and uncles. And I love being with my family, too. My brother and his wife have a pretty active social schedule, so this was the first chance we had to sit down for a meal with them. Every time I'm home I'm amazed to realize my younger brother has grown up. He took command of the corn almost immediately and made the salad. When did he learn to be self-sustaining, to feed himself (and others)? And while he may not want to play with my 2-year-old, he did seem to be the most vigilant about knowing his whereabouts or what he was getting into.

I made Poached Salmon with Dill-Horseradish Sauce, although I left out the horseradish so those of us with more delicate palates could eat it. Then I made a mustard sauce (half Dijon, half mayonnaise) for my brother, who needed something less subtle for his fish (supposedly he doesn't like fish, but you won't hear it from him, and he said he really liked the salmon). We soaked corn on the cob in water for a while, then grilled it, and had Caesar salad with it.

If I had been cooking for my brother alone, I would've made a crab boil, which was one of the meals he and his friends prepared while camping at the lake over the week of the Fourth. Or fajitas, which was part of their Mexican fiesta. They also tried to grill steaks on a windy, rainy night. Those are the kinds of meals that please my brother.
